This is the best cookie recipe I have ever tasted. Chewy and flavourful cookies that just melt in your mouth. You’ll probably melt too when you try a batch of these. Even my dad loves them… and he loves cookies!
– dry ingredients –
2 cups whole wheat flour
1 tsp baking soda
1/4 tsp salt
2-1/2 Tbsp ground ginger
1/2 tsp ground cinnamon
1/2 tsp ground cloves
– wet ingredients –
1/2 cup olive oil
1/4 cup molasses
1/4 cup soy milk
1 cup cane sugar
1 tsp vanilla
Sift dry ingredients (except sugar) into a bowl and set aside. In a large bowl, combine wet ingredients including sugar and whisk until blended. Stir in the pre-sifted dry ingredients and mix until well combined. The dough will be sticky and you may need to dampen your hands to work with it. Roll the dough into little balls and flatten out to your liking; thinner cookies will be crispier, and a slightly thicker cookie will yield a crunch on the edges and a slightly chewy interior. Sprinkle gently with icing sugar for decoration. On an ungreased cookie sheet, bake at 350 F for approximately twelve minutes or until the cookie you want is right there waiting. Go on, take it.
